Vegetarian Fajitas
4 (6-inch) whole-wheat flour tortillas
¼ cup salsa, divided
1 cup Jarlsberg Lite cheese
1 cup chopped tomato
1 cup chopped romaine lettuce
Place tortillas on a large dinner plate and spread salsa on them. Sprinkle cheese over salsa. Rotating plate midway through cooking, microwave on high 1 to 1 ½ minutes or until cheese melts. Top with tomato and lettuce. Makes 4 fajitas.
