Side Dishes


GALLO PINTO

1 medium onion, minced
2 cloves garlic, minced
1/2 stick margarine OR 1/4 c oil
2 1/2 cups white rice, cooked
2 1/2 cups black beans, cooked
Salsa or other seasoning, to taste

Heat oil in a heavy frying pan, cook onion and garlic until soft. Add beans and fry for 10 minutes. Add more margarine or oil, if needed. Add rice, stir well and cook for five more minutes. Season with the hot sauce and serve.
