Turkey-Mex Meatballs
1 pound ground turkey
½ cup dry bread crumbs
2 green onions, finely chopped
1 (8 ounce) can tomato sauce, divided
1 teaspoon chili powder
1 green bell pepper, cut into 1-inch chunks
8 ounces Tex-Mex Gourmet Picante Sauce
In a medium mixing bowl, combine turkey, bread crumbs, onions, ¼ cup tomato sauce and chili powder. Form mixture into 32 meatballs. Arrange meatballs in a 2-quart rectangular dish lined with 2 paper towels. Cover with wax paper and microwave on high for 2 minutes.
Rearrange meatballs, placing undercooked ones toward outside of dish. Re-cover and microwave on high 3 to 4 minutes or until no longer pink; let stand.
Place pepper chunks in a 2-quart casserole. Cover and microwave on high 3 minutes or until crisp-tender. Add remaining ¾ cup tomato sauce and picante sauce. Re-cover and microwave on high 3 minutes or until steaming hot. Add cooked meatballs. Serve with toothpicks. Makes 32 meatballs for 8 appetizer servings.
