Cowboy Cookies

2 cups sifted flour
1-teaspoon baking soda
½ teaspoon salt
½ teaspoon baking powder
1 cup shortening
1 cup granulated sugar
1 cup brown sugar, packed
2 eggs
2 sups rolled oats (NOT quick-cooking)
1-teaspoon vanilla
1 cup chocolate bits

Preheat oven to 350 degrees. Sift together flour, baking soda, salt and baking powder. Set mixture aside. Cream shortening. Gradually add granulated and brown sugars. Add unbeaten eggs. Beat until light and fluffy. Add flour mixture and blend well. Mix in rolled oats, vanilla and chocolate bits. Drop dough by teaspoonfuls onto a greased cookie sheet, 12 at a time. Bake for 7 minutes and remove from sheet immediately.

Notes: expect dough to be crumbly. Yields 11 dozen cookies
